As part of my research for the book France: From the Source , I stayed at Les Pres d’Eugenie, Michel Guérard’s exquisite resort in Landes in south-west France. He kindly took part in the book by giving a sublime recipe for chicken stuffed with Boursin cheese and foie gras. With so much to write about, from his legendary career (3 Michelin stars since 1977) to the experience of staying at the resort and its heavenly spa, I was delighted to write a feature for France Magazine.
