Thomas Keller is one of the best chefs in the US, and so I was so pleased to finally get an interview with him, thanks to an introduction from Michel Roux OBE. Speaking to him on the phone in his office in California, I asked him about how his philosophy draws on the values held by the French as food plays a central part in enjoying time with friends and family.
